05 - Notes from a Danish Farm
Meet Mathilde. A nature lover and lifelong dreamer, Mathilde has found a way of living that brings together the things she values most: creativity, beauty, movement and a deep connection to the natural world.
Her days are spent in the fields, growing vegetables, caring for the soil and learning from the changing rhythms of the seasons. We spoke with her about finding a life rooted in the land and what it means to build a life around the things you genuinely love.
In this interview, she shares what farm life has taught her about slowing down, trusting her intuition and creating a life that feels deeply her own.
The Conversation
Could you take us through the journey that brought you to where you are today?
I have always been a nature child. Growing up, I spent my days climbing trees, building fairy houses and making anything and everything with glitter and a glue gun.
For a long time, I thought I wanted to become an actress, a dream that took me to New York City to study in 2017. Although I loved the work itself, I realized that the lifestyle didn’t suit my personality and my soul. I was craving something more grounded, tangible and earthly.
I had always dreamed of having a farm one day, but eventually I began to question why I was waiting for “one day” to arrive. What if I could simply test that dream now?
So I called Emma, who owns a local regenerative farm close to where I grew up, asked if she would take me as her student, she said yes. It quickly became clear that my dream of having a farm wasn’t just a distant fantasy - it was something I genuinely wanted. Returning to a way of life that, in many ways, resembles the one I knew as a child feels deeply natural, and like I am exactly where I'm supposed to be.
I’m now in my second season on the farm, while simultaneously studying at a regenerative farming school in Denmark. My future is still wide open, and there are many paths I’m curious to explore. I don’t yet know which one I’ll walk down first, but one thing feels certain: whatever path I choose, I want my hands in the soil and to keep working in collaboration with nature.
What does a typical day on the farm look like for you?
On harvest days, I arrive at the farm at 7 a.m. I start the day by making a fresh nettle tea before heading out into the fields to begin harvesting. There is something magical about harvesting as the sun wakes up. After a few hours, when the sunlight starts to hit my face, I’ll take a break for breakfast and coffee before heading back into the fields.
Around noon, I’ll harvest some fresh vegetables for lunch, then cook and enjoy the meal with the farm team. This is a special time for us to reconnect with the reason why we work so hard in the fields: to produce the highest-quality vegetables that simply taste amazing.
After lunch, I head back into the fields and continue working, whether that means sowing, planting, or weeding. At around 5 p.m., I finish for the day and head home.
What is your favorite part of your daily farm routine?
There is something extremely satisfying about being up early, starting the day with the sunrise, moving your body in the fresh air, and having such a close connection to the plants. It feels incredibly calming and grounding. Then, getting to sit down with a good coffee and breakfast, watching the ducks run around while the colors of the landscape become more vivid as the sun rises, is simply wonderful.
How has living on a farm changed you as a person?
Working on a farm has grounded and centered me in a way that I feel in every part of my life. It gives my sometimes jittery energy and thoughts somewhere to go, while also stimulating my brain, creativity, mindset, and physicality.
Beyond that, I simply love what I do. Being outside in nature every day, working with a team that I adore, and being part of something I consider important makes me feel very satisfied and fulfilled in my everyday life.
